This olive oil and herb popcorn tastes like a guilty pleasure, but is a heart-healthy, low-calorie whole grain snack!
1/4 cup delicate Extra Virgin Olive Oil, plus more for drizzling
1/2 cup popcorn kernels
2 sprigs rosemary
freshly ground pepper
In a large, covered pot, heat the olive oil, popcorn kernels and rosemary over medium-high heat. Gently shake the pot until the popping slows, about 5 minutes. Remove from heat and transfer popcorn to a larger bowl. Drizzle with more EVOO and season liberally with salt and pepper.
Variations – this popcorn recipe begs to be adapted. Try adding fresh, whole garlic cloves to the pan while the popcorn pops. Add grated parmesan to the bowl of popcorn or even a dash of truffle oil!
