Bruschetta with Aged Balsamic

Appetizer
Bruschetta with Aged Balsamic – Best when made in advance!
(Prepared with We Olive Tuscan olive oil and  We Olive Aged Balsamic Vinegar)

1. Seed and Chop (finely chop) about 10 Roma Tomatoes.
2. Add 2 tablespoon of  We Olive Tuscan Olive Oil
3. Add 1 tablespoon We Olive Aged Balsamic Vinegar
4. Add 1-2 minced garlic cloves.
5. Add 1 tablespoon Basil leaves ribboned and chopped.
6. Mix well, add salt and pepper to taste and chill for a few hours.

Summer Squash Spaghetti with Lemon Aillade and Ricotta Salata

Summer Squash Spaghetti with Lemon Aillade and Ricotta Salata

Seasonal zucchini and yellow squash is combined with lemon aillade, slivered spring onions, fresh basil and oregano. Topped with broiled garden tomatoes, baby carrots and raw olive oil-marinated ricotta salata.  Crunchy sea salt and freshly-ground black pepper..

For the Aillade

3 cloves garlic
1/3 teaspoon sea salt
pinch cayenne
1 pastured egg yolk
1 tablespoon freshly-squeezed lemon juice
1/2 cup We Olive Mission extra virgin olive oil

Peel and mince the garlic, then transfer to a mortar with the salt and crush into a paste.  Add the egg yolk, garlic and salt to a bowl and whisk thoroughly.

Whisking continuously (use an electric mixer if you prefer), add the We Olive Mission extra virgin olive oil in a slow, steady stream until it reaches a mayonnaise-like consistency.  Add the lemon juice the same way, then refrigerate at least 30 minutes before using.

To Prepare

Dress tomato wedges and baby carrots with We Olive Mission extra virgin olive oil, season with salt & pepper and broil until tender, about 5 minutes.  Set aside.

Meanwhile, toss fine julienne of zucchini and yellow squash (raw or blanched & shocked as you prefer), slivered onions and chopped fresh basil and oregano with lemon aillade.  Season to taste with sea salt and freshly-ground black pepper.

Arrange “spaghetti” on a plate and top with broiled tomatoes, carrots and cheese.  Garnish with additional fresh herbs and toasted pine nuts if desired

Caprese Salad

Ingredients:
1/2 pound fresh mozzarella cheese, cut in thick (1/4 to 1/3 inch) slices
2 large ripe tomatoes cut in thick 1/3 inch slices
8 to 10 large fresh basil leaves
1/4 cup We Olive Arbequina extra-virgin olive oil
We Olive Balsamic Vinegar (optional)
Fresh ground pepper
Sea Salt or coarse salt

Directions:
Arrange alternating tomato and mozzarellas slices on a serving platter, or place a tomato on an individual serving dish and top each piece of tomato with a slice of mozzarella. This may be done a few hours in advance. Keep refrigerated until ready to serve. Just prior to serving, chop the basil coarsely into thin strips. Sprinkle the basil over the tomato/mozzarella pieces. Drizzle a thin line of sweet-fruity extra-virgin olive oil on top of the tomato-mozzarella combination. Follow with a few drops of We Olive Balsamic Vinegar per sliced tomato if desired and then add freshly ground pepper and salt to taste.
Serves 4

Summer Stack Salad with Stella Vinaigrette

4 small tomatoes (sliced)
4 small, egg-shaped fresh mozzarella balls (sliced)
8 large whole basil leaves (finely sliced) plus 4 additional leaves for garnish
Salt and pepper, to taste
1 1/3 cups mixed baby salad greens
1 medium shallot (finely chopped)
2 tbsp aged We Olive balsamic vinegar
1/4 cup We Olive Kalamata extra-virgin olive oil
2 Tbsp. Stella Artois beer

Arrange alternating slices of tomato, mozzarella and basil leaves. Season with salt and pepper. Top each stack with 1/3 cup baby salad greens. Whisk together the shallots, balsamic vinegar, olive oil, Stella Artois and season with salt and pepper in a small bowl. Drizzle some of the dressing around the mozzarella and tomato stacks, and garnish with sliced basil. Serve with additional salad dressing. Serves 4.

Oregon Tuna Melts

Recipe by Tommy Habetz of Portland, Oregon based restaurant, BUNK.

1.      Two 6-ounce cans albacore tuna
2.     1/4 cup finely diced red onion
3.     1/4 cup We Olive Arbequina extra-virgin olive oil
4.     1 tablespoon We Olive balsamic vinegar
5.     1 tablespoon minced basil
6.     1/2 teaspoon crushed red pepper
7.     Salt and freshly ground pepper
8.     4 ciabatta rolls, split
9.     Dijon mustard and mayonnaise, for spreading
10.   Eight 1/4-inch-thick slices of Swiss or cheddar cheese (6 ounces)
11.   Sixteen 1/8-inch-thick lengthwise slices of kosher dill pickle
12.   2 tablespoons unsalted butter, softened

DIRECTIONS
1.     In a medium bowl, mix the tuna with the onion, olive oil, vinegar, basil and crushed red pepper. Season with salt and pepper.
2.     Heat a panini press or griddle. Spread the cut sides of the rolls with mustard and mayonnaise and top each roll half with a slice of cheese. Spread the tuna salad on the bottoms and cover with the pickles. Close the sandwiches and spread the outsides of the rolls with the butter.
3.     Add the sandwiches to the press and cook over moderate heat until the cheese is melted, about 6 minutes. Cut the sandwiches in half and serve.

Sonoma Toast

Adapted from Better Homes and Gardens, December 2009

Sonoma Toast
Start to finish: 15 mins
4 slices country-style sourdough bread
4 oz. gruyere, sliced
1 large ripe tomato, thinly sliced
8 large, fresh basil leaves
1 T We Olive Balsamic Vinegar
1 T We Olive Frantoio Extra Virgin Olive Oil
1 t chopped fresh basil
Place bread on baking sheet. Broil 4 to 5 inches from heat for 2 to 3 minutes, or until toasted, turning once.
Top with cheese, broil 1 to 2 more minutes, or until cheese begins to melt.
Remove from oven.
Top with sliced tomato and basil leaves.

In small bowl whisk together oil and vinegar; drizzle over  toasts, and sprinkle with chopped basil.

Makes 4 servings.

Pasta with Spicy Tomato and Olive Sauce

Adapted From Cook’s Country, December/January 2010

Sauteing the anchovies, garlic and pepper flakes in We Olive Mission Olive Oil for just 30 seconds blooms their flavors and adds depth to this sauce.

3 T We Olive Mission Extra-Virgin Olive Oil
3 anchovy fillets, minced
5 garlic cloves, minced
1 t red pepper flakes
1 (28 oz.) can diced tomatoes
1/2 cup pitted kalamata olives, halved
3 T drained capers
1/4 cup chopped fresh basil
salt
1 lb. linguine
1. Bring 4 quarts water to boil in large pot. Heat oil in large saucepan over medium heat until shimmering. Add anchovies, garlic and pepper flakes and cook until fragrant, about 30 seconds. Stir in tomatoes and simmer until slightly thickened, about 10 minutes. Off heat, add olives, capers and basil.
2. Add 1 T salt and pasta to boiling water and cook until al dente. Reserve 1/2 cup cooking water. Drain pasta and return to pot. Stir in sauce and toss to combine, adding reserves pasta water as needed. Top with grated Pecorino Romano and serve.

Tuscan Tuna-and-Bean Sandwiches

INGREDIENTS:
For beans:
1 (14- to 15-oz) can cannellini beans, rinsed and drained
2 garlic cloves, finely chopped
1 tablespoon fresh lemon juice
2 tablespoons We Olive Organic Ascolano Extra Virgin Olive Oil
2 tablespoons chopped fresh flat-leaf parsley or basil
1/4 teaspoon salt
1/4 teaspoon black pepper

For tuna salad:
2 (6-oz) cans Italian tuna in oil, drained
2 tablespoons finely chopped fresh basil or flat-leaf parsley
1/4 cup pitted Kalamata or other brine-cured black olives, finely chopped
1 celery rib, finely chopped
2 tablespoons finely chopped red onion
2 tablespoons Organic Ascolano EVOO
1 tablespoon fresh lemon juice
1/4 teaspoon salt
1/8 teaspoon black pepper

For sandwiches:
8 (1/3-inch-thick) slices rustic Italian bread (from a round crusty loaf) or 4 (4-inch-long) oval panini rolls
1 cup loosely packed trimmed watercress sprigs

DIRECTIONS:
Prepare beans:
Coarsely mash beans with a fork in a bowl, then stir in garlic, lemon juice, oil, parsley, salt, and pepper.

Make tuna:
Flake tuna in a bowl with a fork, then stir in basil, olives, celery, onion, oil, lemon juice, salt, and pepper until combined.

Assemble sandwiches:
Spoon one fourth of bean mixture on 1 slice of bread, then top with one fourth of tuna salad, some watercress, and a slice of bread. Make 3 more sandwiches in same manner.

Pasta Puttanesca

INGREDIENTS:
1 lb. Penne pasta, cooked al dente, cooled
4 tbsp We Olive Frantoio extra virgin olive oil
8 oz. zucchini, cut 1/4 inch half moons
2 tbsp capers
3 cloves garlic, chopped fine
1/3 cup black olives
12 fresh basil leaves, rolled tight & sliced thin
Juice of one lemon
4 fresh Italian tomatoes, peeled, seeded & diced
Salt & pepper, to taste
Red pepper flakes, to taste

DIRECTIONS:
Saute zucchini, garlic, tomato, and capers in olive oil til warm. Toss in olives and cooked Penne pasta. Stir to coat and warm pasta. Season with salt, pepper & red pepper flakes. Serve and top with parmesan cheese. Buon Appetito!
