Apple and Vanilla Panna Cotta with Balsamic Glazed Apples

1 Tablespoons of We Olive Lemon Olive Oil+1 Tablespoon
3/4 cup of Apple Juice or Cider + 1/4 cup
2 Teaspoons of Gelatin
1 cup of sugar
1 Teaspoon of Vanilla Extract , Paste or Powder
1 cup of whipping cream
1 cup of buttermilk
2 Granny Smith Apples, Medium Dice
1 cup of We Olive White Apple Balsamic

Brush 6 plastic cups of ramekins with lemon olive oil.
Add 3/4 cup of Apple Juice , sugar and vanilla to a sauce pan and bring to a boil. Once boiling and sugar is dissolved, remove from heat. 
Place 1/4 cup apple juice in small bowl. Sprinkle gelatin over and let stand for one minute until applesauce in texture. Add gelatin mixture to hot juices and stir until dissolved. Add whipping cream and buttermilk . 
Divide into ramekins or cups.
Chill until set at least 4 hours or overnight. Run knife around edge of ramekins and flip onto a plate.
For Apple Glaze Garnish- in a non-stick pan on medium heat sauté apples in lemon olive oil until soft 5-7 minutes. Add Balsamic and reduce until thick. Let cool and drizzle over panna cotta when ready to eat.
