Cherry Olive Oil Brownie

This Discover Cooking with California Olive Recipe Contest submission comes from Hidemi Walsh. Hidemi’s grown-up brownies are made with dark chocolate, dried cherries and EVOO. She recommends enjoying them with a glass of red wine.

Serves 4

Ingredients
1/2 cup All-purpose flour
1 teaspoon Baking Powder
5 tablespoons Unsweetened Cocoa
3 oz Dark Chocolate Bar
3/4 cup Granulated Sugar
1/2 cup We Olive Arbequina Extra Virgin Olive Oil
2 Large Eggs
1/3 cup Dried Cherry, chopped coarsely

1. In a bowl, mix together all-purpose flour, baking powder and cocoa.
2. Chop chocolate bar into uniform pieces. In a large heatproof bowl set over a pot of simmering water, put the chocolate pieces into the bowl. Stir until chocolate pieces are melted and mixture is smooth. Remove the bowl from the pot, add olive oil to the bowl whisking constantly. Then add egg one at a time whisking constantly. Whisk in sugar. Then add flour mixture to the bowl and fold in cherries. Mix to blend well.
3. Put the batter into lightly greased 9-by-5-by-3-inch loaf pan and bake in a preheated 325 degrees F oven for 25-30 minutes. Let cool on wire rack.
4. When the brownie has cooled completely, remove the brownie from the pan and cut the brownie into your desired size.
