Best Lemon Olive Oil Cake Recipe

Ingredients:

  • 1½ cups all-purpose flour

  • 2 teaspoons baking powder

  • ½ teaspoon salt

  • 1 cup sugar

  • 3 large eggs

  • ½ cup We Olive Meyer Lemon Olive Oil

  • ½ cup milk

  • 1 teaspoon vanilla extract

  • Zest of 1–2 Meyer lemons

  • ¼ cup fresh Meyer lemon juice

  • Powdered sugar, for dusting (optional)

Instructions:

  1. Preheat oven to 350°F. Grease a 9-inch round cake pan and line with parchment paper.

  2. In a bowl, whisk flour, baking powder, and salt.

  3. In another bowl, whisk sugar and eggs until pale and fluffy.

  4. Add olive oil, milk, vanilla, lemon zest, and lemon juice to egg mixture; whisk until combined.

  5. Fold in dry ingredients until just mixed.

  6. Pour batter into prepared pan and bake 30–35 minutes or until a toothpick comes out clean.

  7. Cool, remove from pan, and dust with powdered sugar or serve with fresh blueberries, raspberries, or strawberries, if desired.
