This Discover Cooking with California Olive Oil recipe contest submission comes from Hidemi Walsh. Hidemi’s healthy salad gets its flavor from a Thai-inspired vinaigrette.
Serves 2
2 tablespoons Sweet Chili Sauce
2 teaspoons Soy Sauce
2 teaspoons Rice Vinegar
2 tablespoons We Olive’s Arbequina Extra Virgin Olive Oil
1 cup Cooked Quinoa
1/2 cup Fresh Blueberries
1/2 Mango, diced small
1/2 cup Sliced Celeries
2 tablespoons Sliced Almonds
1 tablespoon Minced Cilantro
1. Make dressing. In a bowl, mix together sweet chili sauce, soy sauce, rice vinegar and olive oil.
2. Add quinoa, blueberries, mangos, cilantro, celeries and sliced almonds to the dressing bowl. Toss to coat.
