Chocolate Orange Olive Oil Pistachio Cookies


This Discover Cooking with California Olive Oil Recipe Contest submission comes to us from Jenn Fujikawa, a We Olive Belmont Shore customer. Her creation is a  crunchy chocolate cookie studded with pistachios and chocolate chips with the flavor of blood orange olive oil. Enjoy!

Serves 12


  • 2 cups all-purpose flour
  • 1/3 cup cocoa powder
  • 1 teaspoon baking soda
  • pinch of salt
  • 1/2 cup We Olive Blood Orange Olive Oil
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 Tablespoon orange zest
  • 1 cup chocolate chips
  • 1/2 cup dry roasted and shelled pistachios

To Make:

Preheat the oven to 350 degrees. Prep a baking sheet with silpats or parchment. In a bowl whisk together the flour, cocoa powder, baking soda and salt. Set aside. In the bowl of an electric mixer combine the We Olive Blood Orange Olive Oil, brown sugar, white sugar, eggs, vanilla and orange zest. Add the dry ingredients in until the dough is just combined. Fold in the chocolate chips and pistachios. Scoop into small walnut sized balls and place on the prepped baking sheets. Bake for 12-14 minutes depending on your oven, let cool on a wire rack.
