Classic Basil Pesto


1 cup of basil leaves, loosely packed
1/4 cup of pine nuts
1/4 cup grated Parmesan cheese
1 clove of garlic
A pinch of salt
1/2 cup Extra Virgin Olive Oil

In a food processor add first 5 ingredients except olive oil. Pulse a few times to coarsely chop. Turn the food processor on low and slowly add EVOO until mixture becomes a paste. Taste and adjust seasoning with salt.

    pistaccio nuts unsalted work much better. Much more flavor and gives th pesto a slight grittiness. You can buy unsalted nuts at traders joes. I have used this for over 10 years. Youi can mix both pine and pistaccio nusts but the pine nuts have little flavor unless lightly roasted. I use the joy of cooking recipe old version and also use much more basil . You can also mix parmesan with romano but the later is rather salty
