This Discover Cooking with California Olive Oil Recipe Contest submission comes from Jan Valdez. Jan recommends serving this kale sauté alongside salmon or grilled chicken.
- 1/4 cup We Olive Collection Fresh Garlic Olive Oil
- 2 bunches of curly kale, stems removed, and chopped
- 2 garlic cloves, minced
- 1 pint grape tomatoes, sliced in halves
- Juice of 1/2 a lemon
- Sea salt, to taste
- Freshly cracked black pepper, to taste
Heat the garlic olive oil over medium heat in a large saute pan. Add the chopped kale and saute until slightly wilted, about 1 minute. Add the garlic and grape tomatoes. Saute for an additional 2 – 3 minutes until the tomatoes are soft. Add the lemon juice. Season with sea salt and freshly cracked black pepper, to taste.
