Lemon Herb Marinade

This lemon herb marinade is our go-to for summer grilling. It’s fantastic on chicken, seafood and especially vegetables. We used fresh oregano and parsley in this version, but you can swap out any fresh herbs you have on hand. If you don’t have Meyer Lemon Olive Oil, use regular extra virgin olive oil and the zest of a couple of lemons instead.

Makes about 1 cup (enough to marinate 6 servings of chicken, seafood or vegetables)

1/2 cup Meyer Lemon Olive Oil
1/4 cup fresh squeezed lemon juice
1/4 cup chopped fresh herbs (oregano, rosemary, thyme, marjoram, parsley, cilantro, chive, dill, basil and tarragon all work!)
kosher salt
freshly ground pepper

Whisk all ingredients until thoroughly combined. Place in a zip-top bag with items to be marinated and toss well to coat. Chicken should be marinated two hours to overnight. Seafood should be marinated for 30 minutes. Vegetables should be marinated 30 minutes to 2 hours.
