Our pumpkin hummus is an easy-to-make, healthy snack that kids and adults alike will enjoy. The subtle sweetness of the pumpkin is a perfect foil for robust Olio Nuovo, which is available just after the olive harvest for a short time every fall. Serve with pita chips and fresh veggies for a crowd-pleasing appetizer.
Makes 4 cups
Ingredients
1 clove garlic, minced
15 oz. can chickpeas, drained and rinsed
15 oz. can pumpkin puree
2 tablespoons lemon juice
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
2 tablespoons tahini
1/4 cup Olio Nuovo Extra Virgin Olive Oil*, plus more for drizzling
1 teaspoon salt (or more to taste)
toasted pepitas for garnish (optional)
Add the first 6 ingredients to the bowl of a food processor (garlic through coriander). Process until smooth. Scrape down the bowl with a spatula and add the tahini, processing again until smooth. Scrape down the sides of the bowl again, add the olive oil and salt and process until smooth. Taste and adjust the seasoning with salt. Serve in a bowl topped with toasted pepitas and more olive oil accompanied by pita chips and fresh veggies.
If Olio Nuovo is not available, try a robust, grassy olive oil in its place. It’s also delicious with our Jalapeno Olive Oil if you like a spicy kick.
