Zesty Lemon-Garlic Shrimp Farfalle with Mediterranean Green Beans

Valerie tells us, “This surprisingly zesty and garlicky pasta is sure to delight the senses. Serves 4

Ingredients
1 bottle white wine (Riesling, Moscato, or Chardonnay)
1 clove fresh garlic, chopped
2 tbsp. butter
3-4 tbsp. (1 tbsp. reserved) We Olive Fresh Garlic Olive Oil
30-50 pieces shrimp, fresh or previously frozen
Zest and juice of 1 lemon
2 tbsp. lemon curd
3-4 tbsp. (1 tbsp. reserved) We Olive Organic Meyer Lemon Olive Oil
I lb. farfalle pasta
2 lbs. green beans, fresh or frozen
Sea salt, to taste
Cracked pepper, to taste

Fill a large pot ¾ with water, then pour half the bottle of white wine to the brim. Heat stove and bring to a slow boil to coincide with the rest of the recipe. Chop garlic and place in large saucepan or skillet with butter. Drizzle with We Olive Fresh Garlic Olive Oil, stir, and bring to a medium-low heat. While bringing to temperature, remove tails from the shrimp; rinse, drain, and set aside.

As garlic, butter, and oil begin to dissipate and sizzle, splash with white wine to keep a constant amount of liquid in the pan. Add shrimp. Heat until shrimp are cooked through. Stir frequently. Ensure that water in the pot is at a boil, add pasta, and cook according to package directions. Steam the green beans in water.

When shrimp are cooked, add lemon zest and juice, lemon curd, and We Olive Organic Lemon Meyer Olive Oil to pan. Stir. Remove from heat after 2 minutes. Drain pasta, then return to pot. Drizzle with remaining We Olive Organic Lemon Meyer Olive Oil. Season with desired amount of sea salt and cracked pepper.

Remove cooked beans from steam; drizzle with remaining We Olive Fresh Garlic Olive Oil. Sprinkle with desired amount of sea salt and cracked pepper. Fill a large pasta bowl with pasta, then pour shrimp over the top. Serve with beans on the side. Enjoy!
