Spicy Baked Shrimp

This Discover Cooking with California Olive Oil Recipe Contest submission comes from Inge Rosenberg, a We Olive Thousand Oaks customer. Her flavorful shrimp are marinated and baked in a spicy olive oil dressing.

Serves 4

Ingredients
½ cup We Olive Arbequina Extra Virgin Olive Oil
2 TBSP Spice Mix (see recipe below)
2 TBSP fresh lemon juice
2 TBSP chopped parsley
1 TBSP honey
1 TBSP soy sauce
1 lb large shrimp shelled and divined
Rustic bread, cut into bite sized pieces for dipping in the oil

Spice Mix
1 TBSP Onion Powder
1 Tsp Pepper
1 TBSP Dried Thyme
1 TBSP Kosher Salt
2 Tsp Hungarian Paprika
¼ Tsp Dried Sage
¼ Tsp Dried Rosemary
1Tsp Ground Dried Ancho Chili Pepper

Combine first 6 ingredients in baking dish. Add shrimp, and toss to coat. Refrigerate one hour.

Preheat oven to 450 degrees. Bake until shrimp are cooked through, stirring occasionally, approximately 10 min.

Cut bread into chunks. Serve alongside the shrimp for dipping into the yummy spiced oil.

Spice Mix – Combine all ingredients, and then grind in a spice grinder until fine. Extra spice mixture can be stored in an air tight container up to three months.
