Roast your fruits & veggies this fall! You can use We Olive Extra Virgin Olive Oil for all of these fall favorites!

Crisp on the outside and tender in the middle, these roasted pumpkin slices will have your mouth watering! You can make these for your next garden party, or a cozy night in, these pumpkin party snacks are a must to try this fall.
Ingredients:
- 1 small pumpkin or 1/4 large pumpkin
- 2 tablespoons We Olive Extra Virgin Olive Oil
- 1/8 teaspoon ground clove
- 1 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- Thyme
- 2 tablespoons packed brown sugar
- 2 teaspoons sea salt
- Drizzle honey optional
Directions:
- Heat oven to 400F. Using a large metal spoon, scoop out the seeds and insides of the pumpkin. Save the seeds for roasting. Use a sharp chef’s knife to cut slices of pumpkin, 1-inch thick.
- Place pumpkin slices on a baking sheet. Drizzle with olive oil and rub on both sides of the pumpkin. Season with salt, spices, and brown sugar. Roast for 18-20 minutes, depending on the thickness of pumpkin slices (check at 15-minute mark).

Roasted Pears with Honey and We Olive Balsamic Vinegar
The perfect fall snack to enjoy while you cozy by the fire.
Ingredients:
- 2 large slightly under-ripe pears
- 2 teaspoons unsalted butter or We Olive Extra Virgin Olive Oil
- 3 tablespoons We Olive Balsamic Vinegar
- 4 teaspoons runny honey (or more to taste)
Directions:
- Preheat the oven to 200 degrees Celsius/ 400 degrees Fahrenheit.
- Halve and core the pears. Don’t peel them.
- Melt butter or We Olive Extra Virgin Olive Oil in a cast-iron skillet or another heavy-bottomed, ovenproof pan.
- Cook: Add the pears, the cut side facing down, and saute them for two minutes on the stove.
- Roast: Place the pan in the oven and roast the pears for 20 minutes.
- Flip the pear halves and drizzle the We Olive Balsamic Vinegar on the pears. Continue roasting for further 5 minutes.
- Drizzle: Remove the pan from the oven, drizzle each pear with some honey and let the pears rest for another few minutes.
- Serve warm with some of the pan juices and more honey, if you wish.

Roasted Seasonal Sweet Potatoes
You can have these as a snack or a side for dinner, this yummy fall dish will have your mouth watering.
Ingredients:
- 1 lb. sweet potatoes, peeled and cubed into 1″ pieces
- 1 tbsp. We Olive Extra Virgin Olive Oil
- Kosher Salt
- Freshly ground black pepper
Directions:
- Preheat oven to 450º.
- On a large baking sheet, toss sweet potatoes with We Olive Extra Virgin Olive Oil and season with salt and pepper.
- Roast until tender, tossing halfway through, 25 to 30 minutes.
