Warm EVOO Pasta with Lemon Zest and Parm

Ingredients:

  • 8 oz spaghetti, linguine, or angel hair pasta

  • Zest of 1 lemon

  • ¼ cup freshly grated Parmesan

  • Cracked black pepper

  • Sea salt to taste

Instructions:

  1. Cook pasta in salted water until just al dente. Reserve ½ cup of pasta water and drain.

  2. While the pasta is still warm, toss it with the olive oil, lemon zest, and a touch of the reserved pasta water to create a silky coating.

  3. Add in Parmesan and cracked pepper, stirring until everything melts together.

  4. Plate it up and finish with a drizzle of EVOO on top.

  5. Garnish if you’re feeling fancy—then savor slowly.
